The Ruben Rules

Updated: Sep 18, 2023

Wild Cow, Nashville, Tennessee

There is usually a wait list for getting a seat at the Wild Cow. Often we put our name in and then wander the mini-shop district across the street from the restaurant. They are super cute and some vegan businesses are there as well, sadly they’re usually closed when we end up at the Wild Cow.

Although the Buffalo Grinder was not our first choice, we needed to objectify the tofu. I split the sandwich and a Ruben with one of my party members (because truly the Ruben was my first choice and it was not to disappoint either!). Our party was split on several aspects of the Buffalo Grinder’s tofu. One person thought if there was more crisp to the tofu, it would have added more texture to the overall sandwich. Another believed the super firm tofu already added the texture, but the crispness of the sandwich came from the lettuce, pickles, and carrots. This last person loved the feedback of the sandwich and would order it again. All agreed the tofu was bland but the spicy sweet and sour sauce provided lots more flavor that the tofu was missing—it really was the creativity of the sandwich. The bread they chose complimented everything well and overall we were happy with it (even though the Ruben was better).

We all agreed that the tofu needed to be grilled more. If the tofu was cut thinner it would have had more taste, but there would be little resistance in the sandwich. Several thin pieces stacked would have taken the whole dish to a 5/5.
